Super Nutritious Chocolate Chip Bran Muffins

Ingredients / Directions: 

DRY:
1 1/4 cups whole-wheat flour
1 cup wheat bran
1/4 cup ground flax seed
1/2 cup chopped dates
1/4 cup mini-chocolate chips
1 Tbsp cinnamon
1 tsp baking soda
1 tsp baking powder

WET:
1 1/4 cups buttermilk
1 egg
1 (4 1/2 oz) jar of strained prunes (no added sugar/starch)
1 ripe banana- mashed
1/4 cup molasses
2 Tbsp vegetable oil (grapeseed, canola, etc)

1) Preheat oven to 400 degrees F/ 200 degrees C
2) Line muffin tin with paper liners
3) In a large bowl mix together all dry ingredients with a fork or wire whisk
4) In a medium bowl- beat together all wet ingredients
5) Pour WET into DRY ingredients and mix until JUST combined
6) Spoon into muffin cups and bake for 20-25 min or until done
7) EAT and ENJOY! :) :) :)

1 muffin: 170 kcal, 8.5 g fat, 26 g carb., 7.7 g fibre, 169 g sodium, 6.2 g protein
