For anyone new to pattycake, you may be wondering which recipes to try first, so I compiled a list of some of the most popular recipes according to my stats. Delicious data. :)

Most of these recipes are gluten-free, free of refined sugar and generally lower in sugar than most baked goods. Some are dairy-free, egg-free or vegan. (And most are optionally one or more of these.) If you're on a special diet, I trust you know what you can or can't eat, and to not rely on my labeling/tags which can be open to interpretation.

If anyone has a favourite recipe that wasn't included, whether it be from this site or another, please share it in the comments - we'd all love to know!

(Healthy) Chocolate Zucchini Cake

In late summer and early fall, my mom would have giant zucchinis from her garden - they were often comically large and obscenely shaped. Us kids weren't really into veggies, especially giant green ones, so my mom would make these into rich chocolate zucchini cakes. The recipe she used was my Ukrainian grandma's recipe: a lovely moist chocolatey cake with a hint of spice. We loved it.

When I got older, I scored the recipe from my mom, and after looking it over, decided that it needed a bit of a (healthy) makeover. (Her recipe used 1 3/4c white sugar, white flour, and over 1c of fat - yikes!) Being the health-conscious sweet-loving young woman that I was, I altered the recipe to make it as healthy as possible, while still being loyal to the delicious flavours and texture.

The recipe I came up with uses whole ingredients, a lot less sugar and fat (over half as much! don't worry, the zucchini keeps things moist) - and more chocolate, spice and vanilla. I've had this recipe for years, and just remembered that I didn't share it yet, so voila!

These days I'm working on a gluten-free version of this recipe. My current tastes are a bit richer than they were a few years ago, so the new recipe will have a bit more fat and chocolate...

Plums, Pears & Blackberries

I'm so excited about all the fresh fruit that's in season! Here are some great recipes from around the web that celebrate late summer's bounty:

Frangipane Style Plum Tart Recipe
The local plums are in, and here's a beautiful way to enjoy them - in a lovely almond cream tart. (Adi makes wonderful treats with fresh fruit.)

Pear-berry Crisp With Lavender Topping Recipe
This lovely crisp made with blackberries, raspberries, and pears sounds amazing. (The recipe calls for all purpose flour, but I think it would work with a whole flour, light spelt flour, or a gluten-free mix - crisps and crumbles aren't too fussy.) I have lavender growing on my deck that's ready for this aromatic treat...

Roasted Plums with Greek Yogurt
What an elegant way to let the plums speak for themselves - I'm totally going to make this. The lightly carmelized fruit is topped with toasted hazelnuts, and I'm sure other nuts like almonds or walnuts would be delicious as well. I might get fancy and sprinkle the tiniest bit of cardamom or cinnamon on top before baking. You can also make this simple desert with pears. Bonus: This one's quick and easy to make + light and healthy!

Heathy Baking on Group Recipes

I recently joined Group Recipes - a social networking site where foodies can share info and recipes. I really like it! There are all sorts of fresh interesting recipes being added everyday, and it's a good way to meet and exchange info with other foodies and food bloggers. I met a lovely lady from Mallorca who makes wonderful fare with local ingredients, and a prolific fellow Canadian who posts all sorts of inspiring recipes. It's still in beta and is only about a year old - and had NO ads! I really hope the founder doesn't sell out anytime soon :-)

(Healthy) Dark Rum Walnut Brownies


Dark Rum Walnut Brownies: Bittersweet dark nutty fruity chocolaty bliss

Time for some awesome rich chocolaty Dark Rum Walnut Brownies!

Compared to traditional brownies (that generally have a lot of butter/oil, refined wheat flour, refined sugar...) these are healthy. You still need fat and sugar to make a really good brownie - and these definitely have fat and sugar. The difference is this: these have more healthy fats (like egg yolks and omega3-rich walnuts) and healthier sugars (from mineral and fiber-rich dried fruits like prunes). They are also packed with healthy dark chocolate.

Being the cookie-loving health-conscious lady I am, lately I've been concocting baked goods while:

  • avoiding wheat and gluten
  • cutting down on the sugar
  • avoiding animal products
  • incorporating super-healthy ingredients like flax seeds

Is it possible to do these things and still make incredibly delicious cookies? Yes!

The Wonderous Egg

When looking for "healthy baking" recipes, I often come across ones calling for egg whites - rather than whole eggs. While egg whites are definitely healthy and high in protein - the whole egg offers more nutrition - not to mention flavour. Some recipes do call for egg whites because of their special physical properties. Other "healthy" recipes eliminate the yolk because of its high fat and cholesterol content.
